White Chocolate Chunk Cookie Recipe

No, that's not a code name for some new beauty product. I genuinely have been making a lot of cookies at the minute and these are most definitely my favourite so I thought I'd share the recipe with you!


You will need:

100g softened butter (I use Lurpak)
100g brown sugar OR 60g white caster sugar
1 tbsp of honey
150g self raising flour
Lots of chocolate!

  1. Prehear the oven to about 180 degrees (C) and either grease your baking tray or put down greaseproof paper.
  2. Cream the butter, sugar and honey together. 
  3. Add in the flour bit by bit and mix.
  4. Break up your chocolate into about 1cm chunks and mix in.
  5. Using your hands, take a small amount of the dough and roll into a rough ball and place on the baking tray. Don't flatten them as they will do this themselves in the oven!
  6. Put into oven for about 10 minutes or until the edges go goldeny brown.


Voila! The easiest recipe ever, it's so good whenever you want a sweet treat. I actually used a posh white chocolate easter egg I had leftover (still in date don't worry), and ended up making a few batches to take to work as the girls there wanted to try them! You can use whatever chocolate you want though with this recipe - replace with Smarties or Minstrels etc for something different.


This recipe made me 20 cookies (average sized) but you could make plenty of bite sized ones or less larger ones depending on your needs.
